Ingredients
2 1/2 cans of coconut milk or coconut cream (not reduced fat) OR the blended meat of two fresh coconuts with 3 cups of water
1 teaspoon of almond extract
1 teaspoon of vanilla extract
2 cups of frozen pitted cherries (fresh will work too)
Pinch of salt
1/2 cup of sugar (adjust to your sweetness level)
1 cup of dark chocolate chips

Ice cream maker
Blender
Process
In a bender add the coconut milk, almond extract, vanilla extract, 1 1/2 cups of the cherries (reserving a 1/2 cup) and pinch of salt.
In order to adjust to your sweetness level, add the sugar in increments. Taste as you blend and adjust accordingly.
Place mixture into your ice cream maker and slowly add the remaining 1/2 cup of cherries and chocolate chips.
